Are you ready for your Christmas tamales? Andrea Serna will share her many years of experience in a tamale making class held in the colorful environment at Michael Stearns Studio. Andrea is a local cocinera whose New Mexico roots give her dishes a distinct flavor. She learned her tamale making skills in her grandparent’s kitchen as both were professional chefs with exacting standards handed down to their large family.
Serna begins preparing in the late summer for her holiday tamales. To stay true to her Grandmother’s recipe she uses only red and green chili shipped at harvest time to California from a small farm in Hatch New Mexico. The chilies arrived, have been roasted and are finally ready to go.
Class participants will take home family recipes as well as two dozen fresh red pork tamales and green chili and cheese tamales. The menu includes red and green tamales, as well as chiliquiles and flan for your holiday table.
